Code requirement Mandatory manager certification. Whenever a food service facility is operating there must be a Certified Food Service Manager in immediate control who ensures the public health quality of the food. The Certified Food Service Manager must have the authority to immediately enforce food protection practices and supervise employees.

Hours of Instruction 15 hours minimum plus examination

Certification Renewal Every 3 years must take 6 hour recertification course or take challenge exam. Homestudy courses also approved.

Certified Food Service Manager

Whenever a food service facility is operating there must be a Certified Food Service Manager in immediate control who ensures the public health quality of the food. The Certified Food Service Manager must have the authority to immediately enforce food protection practices and supervise employees.

How do I become a Certified Food Service Manager?

Anyone may be certified as an Food Service Manager. The applicant must successfully complete an approved Food Service Manager’s course, and file an application with Licensure and Regulatory Services to receive a Certified Food Service Manager’s photo identification card. The card is valid for three years from the initial completion date of the approved course.

The applicant must come to the Department of Health and Human Services, Licensure and Regulatory Services office to obtain a photo identification card. The office hours are Monday through Thursday between 8:00 a.m. and 4:00 p.m. and Fridays between 8:00 a.m. and 12:00 noon.

To receive a new certification card

– You must bring the original certificate/document that shows you passed an approved course.
– Fill out the application.
– Provide picture identification.
– Pay the appropriate fee. (Check or money order, payable to “Montgomery County, Maryland”.)

To renew a certification card

– You must bring the original certificate/document that shows you passed an approved re-certification course.
– Fill out the application.
– Provide your current card.
– Pay the appropriate fee. (Check or money order, payable to “Montgomery County,Maryland”.)

– Provide proof of completing an approved self-inspection/in-house training program
– Fill out the application.
– Provide your current card.
– Pay the appropriate fee. (Check or money order, payable to “Montgomery County, Maryland”.)

To transfer certification credentials from other Maryland Counties

– Provide your current card.
– Fill out the application.
– Pay the appropriate fee. (Check or money order, payable to “Montgomery County, Maryland”.)

Cards issued by other jurisdictions will be considered for transfer on a case-by-case basis.

Alcohol Certification (TIPs)

The State of Maryland requires that all liquor licensees, or a designated employee, successfully complete an approved alcohol awareness training program every four (4) years. However, policies differ from county to county as to whether or not the certified individual needs to be on the premises during the hours in which alcohol is sold.
